In all metal mode -what would be best settings for deeper coins?

Not too many settings in all metal. For deep coins - Sens - max if you can get there. Manuel - GB. Audio pitch - to your liking. Threshold- set just so you can hear it. Use all metal mode with mid to zero trash areas. Dig the numbers you are looking for.
All metal is also easier on the ears if there is emi floating around.

I use nothing but all metal mode, even in trashy areas. You just have to get the small coil for those trashy areas. The EMI is much less severe in all-metal, and it seems like the VDI is a lot more consistent. "Hunted out" sites are by far my favorite though, as all-metal goes very deep, and the good targets to trash ratio is much higher.
